Healthy Banana Bread Mini Muffins Recipe

If you are looking for a healthy dessert to make, check out this recipe for banana bread mini muffins by Goodful.

These little bad boys are super tasty and come with four different toppings:

  1. strawberries
  2. blueberries
  3. dark chocolate chips
  4. walnuts

These banana bread muffins are also macro-friendly, with only around 140 calories per muffin for the strawberry and blueberry toppings, and only around 160 calories per muffin for the choc chip and walnut toppings!

Here are a few awesome nutritional facts for each of the toppings of the banana bread muffins:

  • Strawberries are rich in a number of micronutrients, including vitamin C, manganese, pholate and phenolic substances. Research has shown that strawberry consumption is associated with a decreased cardiovascular risk and that the phytochemicals present in strawberries exhibit anti-inflammatory, antimicrobial, antioxidant, anti-hypertensive and anti-allergy properties. (1)
  • Blueberries are rich in micronutrients, including vitamin C, vitamin K, manganese, polyphenols and phytochemicals. According to scientific research, blueberries may help lower the risk of heart attack and help lower blood pressure. (2, 3)
  • Dark chocolate is rich in the vitamin B complex, especially B6, in vitamins K and E, as well as in iron, magnesium, phosphorus and zinc. However, dark chocolate is high in calories, so eat in moderation! (4)
  • Walnuts are high in vitamins B and very rich in a number of minerals, including iron, magnesium, manganese, phosphorus and zinc! According to the FDA, “supportive but not conclusive research shows that eating 1.5 ounces per day of walnuts, as part of a low saturated fat and low cholesterol diet and not resulting in increased caloric intake, may reduce the risk of coronary heart disease”. Ingredients (makes 12 muffins)

  • 3 ripe bananas

  • 2 eggs

  • ½ cup full-fat Greek yogurt

  • ⅓ cup honey

  • 1 teaspoon vanilla extract

  • 1½ cups whole wheat flour

  • 1 teaspoon baking soda

Toppings

  • Diced strawberries

  • Dark chocolate chips

  • Blueberries

  • Chopped walnuts
