Bell Pepper Egg Boats - Myolean Fitness

If you are looking for a quick, easy and healthy breakfast, Goodful has you covered once again with these delicious bell pepper egg boats!

This breakfast is high in protein, low in carbs, high in dietary fiber and packed with vitamins and minerals.

Eggs are an excellent source of bioavailable, high-quality protein, as well as a great source of a number of micronutrients, including vitamins A, B, D, choline, phosphorus, and zinc.

Despite the concerns about the negative effects of egg consumption on health, research published in the Journal of the American College of Nutrition suggests that an egg intake of one egg per day is not associated with an increased risk of cardiovascular disease and is, actually, associated with a 12% lower risk of stroke.

With regards to dietary fiber, according to research, dietary fiber can help lower the risk of heart disease, stroke, hypertension, diabetes, obesity and certain gastrointestinal diseases. It can also help lower blood pressure and cholesterol levels, and can improve glycemia and insulin sensitivity!

Pro tip: If you want to get even more protein in your breakfast without increasing its fat content, add another 1-2 egg whites to each of the bell pepper egg boats! This will increase the protein content of each serving by another 4-8 grams, without adding to its fat content.
