Bell Pepper Egg Boats - Myolean Fitness

So I searched and searched the internet, and couldn’t for the life of me find a high protein S’mores recipe.

That is, until my friend Elkie Chiu, who has all sorts of amazing macro-friendly recipes on her Facebook and Instagram accounts, decided to make her own high protein S’mores recipe.

And, as usual, she knocked it out of the park!

So let’s all wipe the drool off our faces, and get to baking!

Nutrition (per 1 cracker – 1/15th of recipe)

Ingredients for crackers

Dry ingredients
  • 30g coconut flour
  • 30g Grenade Hydra 6 Protein Powder – Killa Vanilla (or another vanilla-flavored protein powder of your choice)
  • 30g granulated sweetener (Truvia)
  • 1/4 tsp baking powder
  • 1 tsp cinnamon

Wet ingredients
  • 1 large egg
  • 25g melted coconut oil (or oil of choice)

Ingredients for filling

  • Grenade Carb Killa Milk Chocolate Spread
  • Marshmallows (can use sugar-free ones)

Method

  1. Preheat the oven to 165 C Fan.
  2. Mix all the dry ingredients in a bowl, make a small well in the center, add the egg, and mix with a large spoon. Now add the melted coconut oil, and combine until the mixture resembles bread crumbs. Using your hands, knead the mixture until you form a ball of dough.
  3. Place the dough on a piece of baking paper, cover it with cling film, and roll it into a rectangular shape of around 1/8 inch (or 3 millimetre) thickness. Remove the cling film, and cut the dough into one large rectangle (save the dough scraps to re-roll).
  4. Use a knife to score the dough into cracker-size pieces, taking care not to cut all the way through. Then pierce the tops of the crackers with a fork to create tiny holes.
  5. Transfer the baking paper with the dough onto a baking sheet, and bake for approximately 10-12 mins, until the crackers are golden brown.
  6. Allow the crackers to cool and harden, then break them apart.
  7. Spread Grenade Carb Killa Milk Chocolate Spread onto one side of the cracker, place a marshmallow on top, and either microwave for 5-8 seconds until the marshmallow melts or place under a grill for 30 seconds (keep an eye on it as the marshmallow can burn very quickly). Place another cracker on top and enjoy!
