Bell Pepper Egg Boats - Myolean Fitness

This is a recipe for Lebanese style chicken breast skewers that you are bound to love, as it makes for chicken breast that is juicy, tender, and packed with flavor!

Nutrition (per 2 skewers)

Calories (247 kcal)
Protein (49.5g)
Carbohydrates (2g)
Fats (4.7g)

Ingredients

  • 1kg (or 2.2 lbs) chicken breast

Ingredients for marinade

  • 60g fat free Greek yogurt
  • 20ml freshly squeezed lemon juice
  • 12g olive oil

  • 5 crushed garlic cloves
  • 1 tsp salt (or to taste)
  • 1 tsp paprika
  • 1/2 tsp thyme

Method

  1. Mix all the marinade ingredients.
  2. Cut the chicken breast into roughly 1.5 cm cubes, and mix in the marinade. Cover and refrigerate for at least 4 hours, but best overnight.
  3. Thread the chicken breast onto skewers, allowing for approximately 100g of chicken per skewer.
  4. Grill until cooked through.

Quick tip: if you’re using wooden skewers, soak the skewers in water for 30 mins or cover the ends in foil.
