One-Pan Chicken and Veggie Bake - Myolean Fitness

Do you need ideas for a quick and easy meal for tonight? Why not try this healthy and tasty one-pan chicken and veggie bake recipe by Goodful?

Not only is this meal rich in protein, but it’s also packed with Vitamins A, C and K, since sweet potatoes are a good source of Vitamin A, while Brussels sprouts are full of Vitamins C and K.

Pro tip: leave the chicken skin on while the meat is cooking to help keep the chicken from drying out, but remove it before eating it. Also, use two tablespoons of olive oil instead of four. This will reduce the calorie content of one serving by around 200 calories!

  • 1 large sweet potato, cubed
  • 1 pound brussels sprouts, halved
  • 2 apples, sliced
  • 4 chicken thighs, skin on
  • 4 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary
  • 2 tablespoons fresh thyme
