Bell Pepper Egg Boats - Myolean Fitness

If you are looking for a quick and easy high protein, low fat muffins recipe, you can end your quest – this is the recipe you’ve been searching for!

These little treats aren’t just moist and delicious, but they are also low in fat and calories, and high in muscle-building protein, which means that they are super friendly to your waistline!

Let’s get right to it, then!

Nutrition (per 1 frosted muffin – 1/6th of total)

Calories (149 kcal)
Protein (13g)
Carbohydrates (13g)
Fats (5g)

Ingredients for batter

  • 80g chocolate cake box mix (I used the Betty Crocker one)
  • 60g chocolate protein powder (protein blends work best – I used Grenade Hydra)
  • 120ml Coke Zero (or your choice of diet soda)
  • 30g egg whites

Ingredients for frosting

  • 100g low fat cream cheese
  • Scoop of vanilla protein powder
  • 1 tbsp of granulated sweetener (optional)

  • A small splash of milk, if the frosting is too thick

Method

  1. Preheat oven to 170 C Fan.
  2. Mix all the ingredients until smooth.
  3. Spray a muffin tray with non stick spray and fill each hole about 2/3 full (I got 6 muffins out of the batter).
  4. Bake for around 12-15 mins (mine were done in 12 mins – try not to overcook, as doing so will dry out the muffins).
  5. Frost or eat plain .
